We all need a treat from time to time and now we can have our cookies and eat them too. Gluten free Keto Double Chocolate Chip Cookies are here with a little help from Ketologie using our chocolate Shake Mix and our Sweet Like Sugar Substitute. Simply make the dough in a food processor then fold in your Keto friendly chocolate chips or dark chocolate chunks and bake for about 20 minutes at 325 degrees F.
*pro tip: before using a 2 oz scoop to portion your cookies spray the inside of the scoop with oil so that the dough slides right out onto the pan.
Ingredients:
1.5 cups Almond Flour
3 large Eggs
2 scoops Ketologie Chocolate Shake Mix
3 tbsp Ketologie Sweet Like Sugar Substitute
4 tbsp Room Temperature butter
⅛ tsp Sea Salt
½ cup Lilly’s Chocolate Chips or 85% dark chocolate chunks.
½ tsp Baking Powder
½ tsp Baking Soda
Instructions:
In a food processor combine all ingredients except for chocolate chips by pulsing just long enough to form a dough.
Add half of the chocolate chips and pulse just a few times to fold in the chips without chopping them up.
Use a 2 oz scoop to portion out 16 cookies on a sheet of parchment paper. Spray the scoop with oil before you begin to prevent dough from sticking to the scoop
Add extra chocolate chips to the top of each cookie
Bake at 325 degrees F for 18-22 minutes
Let cool for 10 minutes.
