
The crust is quick and easy to prepare using coconut flour and butter, simply combine the ingredients for the crust in a bowl and bake in a tart pan for 15 minutes while you combine fresh strawberries, Ketologie Strawberry Shake and cream cheese. This strawberry cheesecake tart is a healthy way to indulge your sweet tooth while keeping on track with a ketogenic lifestyle. Full of healthy fats and fresh strawberries this recipe will be a favorite for sure whether you’re someone who is strict Keto or just trying to reduce sugar and carbohydrates from your current diet.
Not in the mood to bake, no problem at all. Skip the crust and just make this no bake cheesecake on its own, serve it in a mini mason jar or get fancy and make a cheesecaketini with a stemless martini glass.
Ingredients:
Tart crust-
2 eggs
1 cup coconut flour
½ cup cold butter (cubed)
2 tbsp coconut oil
1 tsp vanilla extract
2 tbsp Ketologie Sweet Like Sugar
⅛ tsp salt
Instructions-
Add all ingredients to a food processor and pulse until a rough dough has formed. Remove from processor and form into a ball.
Place dough ball in the center of a greased 12 inch tart pan, press the dough out towards the edges until your tart pan is evenly covered. Using a fork gently poke holes throughout the tart to prevent the dough from rising up.
Bake for 12 minutes at 375 degrees F until crust is golden on the edges. Set aside to cool.
Cheesecake Filling
Ingredients-
16 oz cream cheese (softened room temperature)
¼ cup sour cream
½ cup heavy cream
2 tsp vanilla extract
3 scoops Ketologie Strawberry shake mix
2 tbsp Ketologie Sweet Like Sugar
½ cup diced fresh strawberry
Instructions-
Using a mixer whip the heavy cream with the vanilla extract and Ketologie Sweet Like Sugar until stiff peaks have formed.
In a second bowl combine sour cream, cream cheese and Ketologie strawberry shake mix until smooth. Then using a spatula fold in the whipped cream mixture and fresh strawberries to create a light strawberry cheesecake filling.
Pour cheesecake filling into room temperature tart pan and let chill for at least 2 hours. (30-40 minutes in freezer)
Garnish with fresh sliced strawberries and serve.
