Serves 3 l Prep time: 15-20min
Ingredients:
3 TBSP butter
3 cloves garlic, minced
1 punnet of sliced mushrooms
1/3 cup heavy whipping cream
½ tsp dried thyme (optional)
½ tsp dried oregano (optional)
½ tsp sea salt
¼ tsp ground black pepper
2 TBSP grated parmesan
Instructions:
Melt butter in a large frying pan or skillet (med heat) Add garlic and mushrooms, cook for 6 minutes until the mushrooms are soft and browned, stirring/turning them occasionally.
Add heavy cream, salt, pepper and spices (if using). Bring to a simmer and keep it there for another 6 minutes until the sauce has reduced/thickened. Stir in shredded/grated parmesan cheese and serve!
Variations: try adding a couple handfuls of your favorite greens such as Swiss chard, kale or spinach towards the end of cooking (a couple of minutes will be enough for the greens to wilt nicely). A squeeze of lemon works well too if you have any handy!
