Ingredients:
1 tin of coconut milk or cream
1/8 cup Thai red curry paste
¾ cup unsweetened natural peanut butter
½ tsp sea salt
1/4 cup SweetLikeSugar
2 TBSP apple cider vinegar
½ cup water
Add optional protein
Example - 15oz shrimp
Instructions:
Put everything together into a medium sized saucepan and bring to the boil, stirring throughout to prevent burning on the bottom. Reduce heat and simmer the sauce for 3-4 minutes. Take off the heat and allow to cool.
Serve with cooked chicken, beef or shrimp. You can either pour it over the meats or use as a side dipping sauce.
This recipe works as a simmer sauce across many different proteins. Use as much protein as you normally would for 4 adults, dice and saute until golden/browned in a large skillet. Add pre-prepared sauce and simmer on low for an extra 20 minutes.
