Ingredients:
Salmon fillets (2-4)
170g jar of green pesto (make sure it’s a good quality one, made with real olive oil, basil and parmesan cheese)
2 TBSP olive oil
*Optional: 1 TBSP shaved parmesan cheese

Preheat your oven to 350F. Arrange the fillets in the baking dish, skin side down. Paste the olive oil over each fillet, then using a teaspoon or a butter knife, cover the top of each fillet with a nice thick layer of the green pesto. Scatter parmesan shavings on each if using, and place in the oven to bake for 20 -25 minutes (depending on the number of fillets).
Towards the end of the baking time, you can check the centre of one fillet to see if its cooked all the way through. If the salmon is still pink in the centre, return to the oven in 5 minute increments until you’re satisfied its cooked through. If you have a meat thermometer, you can use this instead and take the fish out when the centre reaches 145 degrees.
Serve with grilled asparagus, green salad or slices of cucumber. So delicious!
