Caeser Salad

Serves 1 l Salad prep time: 30min l Dressing prep time: 15mins

Ingredients for Salad:

2 hard-boiled eggs

2 rashers of streaky cooked bacon

2 cups of Romaine or Cos lettuce, ripped to bite size pieces

2-3 anchovies (if you like)

½ avocado, sliced or cut into chunks

2 TBSP easy Caesar dressing (below)

Easy Caeser Salad Dressing (4 serves):

2 TBSP good quality mayo

½ TBSP apple cider vinegar

1 TBSP Dijon mustard

3 cloves garlic, crushed or finely minced (depending on how much you love garlic!)

½ tsp salt and ½ tsp ground black pepper

1 tsp Worcestershire sauce

1 tsp anchovy paste

¼ cup water

To serve: dust salad with shaved or grated Parmesan cheese

Instructions: 

Combine lettuce with the dressing, top with sliced or diced hardboiled eggs and bacon. Garnish with the avocado, and anchovies if using and serve.

Dressing Instructions: In a medium size mixing bowl, whisk all the dressing ingredients together and season to taste. Transfer to a storage container and keep for up to 1 week.
